In 1956, Carl Boraiko took over the Green Shutters Restaurant on Auburn Street in Rockford and changed it from a inside dine-in restaurant to an outside drive-in. It was so successful that he built a second one on 11th Street in 1957 and named it Skeet's. Green Shutters would eventually be re-named Skeet's. A third location was opened on North Second Street in Loves Park, then a fourth at Auburn & Central in 1967. Skeet's was famous for their spectacular Southern Fried Chicken special, prepared with only the finest Georgia Grade A Chickens and cooked by a special process to insure the peak of mouth watering perfection. In 1967, Boraiko wanted to cash in on the thin-sliced roast beef craze and opened a new franchise called Skeet’s Beef-A-Roo. The fun-loving “Skeet” mascot became the basis for Beef-A-Roo’s “Lil Cowpoke” and is a restaurant that still thrives today. Skeet's would eventually disappear from Rockford with the last location closing in 1976.
