Zarita’s is a name that resonates with downtown Madison denizens of the 1980s. The first Zarita’s Mexican Restaurant opened at 227 State Street in December 1980. Mexican food lovers thrilled to the “Sancho Burrito” and the “Beef Chili Burrito” served up with ice cold Pepsi. A second location opened on Fish Hatchery Road in 1986. Alas, all good things must come to an end. The State Street location got swallowed up by the Civic Center at the turn of the next decade and the Fish Hatchery Road location closed soon after.
